En 2006 egres\u00f3 como bar manager del Instituto Superior \u00c1ngel Salvadori AEHG La Plata. En el a\u00f1o 2008 egres\u00f3 como cocinero en la escuela The BUE Trainers.<\/span><\/p>\n

Sus comienzos en la gastronom\u00eda fueron en Abruzzese, su negocio famliar. Con los a\u00f1os, estudi\u00f3 cocina y cocteler\u00eda, perfeccion\u00e1ndose constantemente en \u00e9sas y otras \u00e1reas vinculadas a la administraci\u00f3n y log\u00edsticas de restaurantes y bares.<\/span><\/p>\n

En septiembre de 2016 abri\u00f3 su primero local: Lupita. Luego le siguieron en octubre de 2017, Negroni La Plata; en enero de 2018, Negroni City Bell; en julio de 2018, Dean & Dennys; en enero de 2019 La Birrer\u00eda La Plata. Tanto en Negroni La Plata como en La Birrer\u00eda fue consejero y asesor en la ubicaci\u00f3n de los locales, en el armado del producto, las capacitaciones del personal y otras \u00e1reas.<\/span><\/p>\n

En 2020 desarroll\u00f3 nuevas aperturas: en abril, Hell\u00b4s Pizza La Plata, en octubre Hell\u2019s Pizza City Bell y en diciembre, expandiendo su tarea a otras fronteras, fund\u00f3 el bistr\u00f3 Magoya, en Paraguay, junto a socios argentinos radicados en ese pa\u00eds.<\/span>[\/vc_column_text][\/vc_column_inner][\/vc_row_inner][vc_column_text]Tambi\u00e9n en 2020, como miembro de la cuarta generaci\u00f3n de Abruzzese, encar\u00f3 un rebranding y restyling de la marca, incluyendo adem\u00e1s un cambio de local, a uno m\u00e1s amplio y moderno. Con la proyecci\u00f3n a seguir siendo uno de los espacios referentes de la gastronom\u00eda de la ciudad de La Plata -lo es desde 1937-, el restaurante agreg\u00f3 a su cl\u00e1sica oferta de cocina, la cocteler\u00eda de autor, dise\u00f1ando diversas y nuevas estrategias para conservar su clientela habitual y adem\u00e1s acercarse a un p\u00fablico m\u00e1s joven.<\/span><\/p>\n

El 2022 comenz\u00f3 con nuevos desaf\u00edos para el empresario. Por un lado, Grupo ProMambo adquiri\u00f3 el desarrollo de Antares City Bell, un local grande y muy concurrido, referente de la marca de cerveza artesanal marplatense. Un punto de encuentro de muchos platenses y un local ic\u00f3nico de la marca. Nicol\u00e1s adem\u00e1s firm\u00f3 un acuerdo para el desarrollo de la marca Antares, siendo el citibelense el primer local en que se aplica el convenio.<\/span><\/p>\n

Por otro lado, Nicol\u00e1s desarroll\u00f3 el concepto de Abruzzese Grill, en el coraz\u00f3n citibelense. Un sal\u00f3n amplio, en el que disfrutar de carnes maduradas, manteniendo la historia de los platos tradicionales de la marca y su galardonada cocteler\u00eda, con una l\u00f3gica m\u00e1s moderna, apuntando a un consumidor exigente y con planes de expansi\u00f3n hacia CABA y el interior del pa\u00eds a trav\u00e9s a trav\u00e9s del sistema de franquicias.<\/span><\/p>\n

Lo acompa\u00f1a el contador Alejandro Mamblona -con m\u00e1s de 30 a\u00f1os de labores profesionales y en \u00e9l \u00e1rea empresarial-, tambi\u00e9n socio fundador del grupo Promambo, encargado del \u00e1rea financiera y econ\u00f3mica del grupo.<\/span>[\/vc_column_text]
